Sprouts need no introduction to health and diet conscious people. Sprouts are high in protein and can be eaten raw unlike other pulses viz. toor daal , urad daal etc. The Sprouting process is assumed to increases the nutrition quotient of the grams. Please refer to Wiki link for more details on benefits of Sprouts These can be power packed wholesome meal in itself or eaten as salad. You can use your own imagination to prepare the sprouts salad I am sharing my favorite recipe.
Ingredients
- 1 Large cup of green gram sprouts
- 1 small onion chopped finely
- 1/4 cup of walnuts chopped roughly
- 2 tbsp. raisins / Kismis
- fresh coriander chopped
- Salt to taste
- 1/2 tsp of pepper powder
- 1/4 th tsp jeera powder
- 1/2 fresh lemon juice
- 1 small cup of grated fresh coconut
How to make Sprouts
- Soak 200 grams of Green grams for 7 to 8 hours.
- After soaking for 7 to 8 hours drain the water and transfer the grams to a muslin cloth and tie the cloth tightly and keep the potli in am empty vessel and cover with a lid. in next 7 to 8 hours your grams should have sprouted. Check and leave for some more time in case sprouting is not yet done.
- People who want to avoid the potli method can simply transfer the drained grams into a perforated vessel and close it with lid and keep it a warm dark place for sprouting.
- Once sprouted you can store these in airtight container in refrigerator and use over next 3 to 4 days.
Salad Preparation Method
Take a bowl add Sprouts, walnuts, raisins, onions, coriander, salt, pepper, lemon juice and pepper powder and toss well add coconut and mix again and serve.
You may add Pomogranate or thinly sliced apples instead of raisins for sweetness.
you can replace walnut or add roasted peanuts for crunch.
