DrumStick n Potato curry

 

Hey friends #ootaayita? A friend shared 5 to 6 drumsticks from her garden. We have been using drumsticks for years in Rasam, Sambar, Huli but never had made a curry from these. Somehow always felt drumstick gravy curry will taste good with potatoes. Happened to google up and found quite a few recipes. However, I felt these recipes were more watery and weren’t thick, creamy ones. So decided to go ahead and add Khus khus and cashew paste in my version and the results were amazing.  This is now a must have on the menu whenever we get drumsticks. It is a quite easy recipe. Once you keep all the required ingredients ready its a quick one too. For newbie cooks, always plan tasks in such a way that you don’t have to wait for one thing to be done before next step. See what all can get on to the stove in parallel, as most of us have multi burner stoves, so why not make the most of it.  Now here goes the recipe.

Ingredients

  1. Cashews and Khus khus (Poppy Seeds) together half cup soaked for 20 -30 mins.
  2. 2 Drum sticks cut into 2-3 inches long pieces. Cut and discard the edges,
  3. 2 medium to big sized potatoes. Peeled and cubed.
  4. 1-2 Medium sied tomatoes chopped finely.
  5. 1 Large onion chopped finely.
  6. 2 -3 green chillies slit length wise
  7. Oil 2-3 tbsp.
  8. Cumin seeds 1 tsp
  9. Black cumin seeds ( Shah Jeera) 1tsp
  10. Pinch of turmeric and hing
  11. Salt to taste
  12. Red chilly powder. Per taste
  13. Coriander powder. 1 tsp
  14. Coriander for garnishing

Steps

  1. Boil drumsticks in water n salt for 5-8 mins till they are tender. Once done, keep them aside. Do not throw away the water as it could be used in gravy.
  2. Make some holes using a fork in the potatoes which are cubed.
  3. Take oil in a  Kadhai or wok and shallow fry these potato cubes and keep them aside. These holes will help gravy to be absorbed.
  4. In the Same oil add jeera shah jeera and let them splutter.
  5. Add turmeric and hing.
  6. Add chopped onions, chillies and  cook them for 3 – 4 minutes.
  7. Once onions turn golden add chopped tomatoes.
  8. Add salt( as per taste and remember we have added some salt to drumsticks as well so add accordingly),chilly powder and corriander powder. Saute for few mins.
  9. Add drumstick n potatoes. Also add the water used for boiling drumstick.
  10. Let this gravy simmer for a minute or two.
  11. Drain the water used for soaking khus khus n cashew.You can use a tea strainer. Grind the cashews and khuskhus to a smooth paste adding little water as required.
  12. Now add this paste to the gravy.
  13. Check the gravy consistency and add some more water as required.
  14. Cover the Kadhai with a lid and let everything come together into a rich creamy gravy.
  15. Transfer the curry to a serving dish and garnish with coriander.

This curry goes well with rice, Jeera rice, and roti as well. You can serve this as a side dish for your vegetable pulao too.
